What is Gellan gum?
Gellan gum is a high molecular linear polysaccharide with good stability, acidolysis resistance and enzymolysis resistance. The gel is stable even under high-pressure cooking and baking conditions, and it is also stable in acidic products, and the performance is best under the pH value of 4.0~7.5.
